Passatelli are a traditional dish of Italian cuisine, especially typical of the regions of Emilia-Romagna and Marche. Their origin dates back to ancient times and they are a tasty and simple way to use grated stale bread, the basic ingredient in their preparation. The classic recipe calls for the use of breadcrumbs, eggs, grated Parmesan cheese and nutmeg, mixed until a soft but consistent dough is obtained.

The dough is then passed through a tool called a “passatelli iron” or, alternatively, a potato masher with large holes can be used to form small elongated cylinders, similar to large short spaghetti noodles. Passatelli are traditionally cooked in a hot broth, usually meat or chicken broth, which enhances their delicate flavor and makes them a warm and comforting dish, ideal for the cold seasons.
