Tortellini are one of the most celebrated gastronomic specialties of the Italian culinary tradition, particularly of the Emilia-Romagna region. These small and delicious fillings, usually served in broth, are a symbol of Bolognese cuisine and are appreciated all over the world.

The preparation of tortellini requires some skill and attention to detail. The dough is made of wheat flour and eggs, kneaded to a smooth, elastic consistency. After rolling out the dough into thin sheets, squares are cut out, ready to be stuffed. The traditional filling consists of pork, prosciutto, mortadella and Parmesan cheese, flavored with seasonings such as nutmeg and pepper. This combination of ingredients gives the tortellini a rich, enveloping flavor.

Once stuffed, the pasta squares are folded and sealed to form the typical cap shape that is characteristic of this dish. The history of tortellini is shrouded in legends. One of the most famous tells that their shape is inspired by the belly of Venus, the goddess of beauty. In fact, the typical hole in tortellini is called the “navel of Venus”.
